Avignonesi  正是受到這種想法的推動，我將自然動力法引入愛唯儂堡，從研究地質研究，分析土壤的多樣性做起。自此啟動這場對自然風土的偉大探索。 

    2011年起，酒莊正式申請有機農業認證，並進入三年的轉換期。在過去兩年裡，購置了蒙帕恰諾（Montepulciano）90公頃土地，使得愛唯儂堡葡萄園總面積達到200公頃，並擁有十個葡萄園，包括了蒙帕恰諾（Montepulciano）與科多娜（Cortona）兩大產區。至此更能夠釀造物美質精的高貴酒款，以滿足世界各地的需求。申請有機農業認證的轉化過程延長兩年，但為了做出心目中最理想的酒款，釀製團隊共同決定堅持到底。

值得一提的是，愛唯儂堡釀造團隊由多位國際化製酒師組成，除此之外亦然擁有極富經驗的葡萄園管理團隊，勢必能夠釀造出能夠徹底體現本地風土優雅豐富，甚至不同地塊細小差異與各個年份特色的佳釀。並擁有共同的製酒信念－深度探索並閱讀土地，發現托斯卡納酒款本應具有的自然純淨。

Avignonesi-Capannelle50&50

早在1988年托斯卡納的葡萄酒產量特別的少但品質特別的好。因此鼓勵Raffaele Rossetti使用Capannelle種植在托斯卡納的Sangiovese和Avignonesi de Montepulciano種植的Merlot。因此一瓶優質獨特的紅葡萄酒50＆50誕生了，融合Capannelle的Sangiovese和Avignoneside Montepulciano的Merlot兩個最大優勢從此聲名大噪 ,除了聖酒Vinsato外,酒廠另一大賣點就是50&50  收藏家想擁有的夢幻佳釀。

Oaky, lending a resinous cast to the black cherry, strawberry, spice and camphor flavors. The wood integrates with aeration, but the dense structure and sweet fruit accents on the finish need time to mesh. Sangiovese and Merlot. Drink now through 2020. 1,650 cases made. –BS 

Adeep ruby red wine with tremendous structure and depth. Firm yet silky tannins and elegant notes of raspberry and redcurrant. The bouquet has hints of leather, cigar case, Tuscan herbs and vanilla. An unforgettably long and sensuous finish.
