Domaine Jean-Marc Pavelot父子二人同心，打造出伯恩丘最出色的Savigny-les-Beaune，酒莊位於Cote de Beaune)北部，酒莊面積約13公頃葡萄園，包括8片一級園及2片村莊級，酒莊擁有較老的葡萄樹藤，1er Les Serpentières、1er Aux Gravains、1er La Dominode…則產自80年的老藤。

Domaine Pavelot的葡萄園採用傳統天然的種植方法，葡萄園全是人工採收、大多都使用犁田來替代除草劑的使用，葡萄傾向全部去梗 100%後發酵釀造，依據年分及葡萄園地塊)、經4-5天低溫浸皮，謹慎萃取，不依賴新桶，陳年約一年裝瓶。

La Dominode　位於Savigny-lès-Beaune的南邊 占地約６。７公頃，該村莊的風格表現相當強烈獨特，柔順且單寧表現含蓄，通常給人偏女性化的陰柔風格；但一級園卻表現的較為有力，可算是布根地剛柔並濟的代表酒款之一。

Good medium red. Cool, vibrant nose combines cherry, bitter chocolate, minerals, mint, licorice and leather, all lifted by a peppery nuance. Suave, penetrating and sharply delineated; a lovely expression of terroir rather than a fruity style. Intriguing notes of minerals, earth and pepper. Mounts slowly and lingers impressively on the back, giving an impression of strong extract.

*Sweet Spot Outstanding* Two-thirds of the vines are between 70 and 80 years of age and the remaining vines are approximately 20 years old. For a vineyard hard hit by hail, this is very ripe with spicy dark and earth black fruit aromas that lead to rich, full and notably sweet flavors that are detailed and intense, all wrapped in a powerfully long and mouth coating finish.

This too has just a hint of dryness but not really enough to detract significantly from the overall sense of harmony.

Louis Latour Chablis

夏布利產區內覆蓋著侏儸紀晚期堆積而成的白色石灰岩，表現出其應有的高貴典雅風格。在不鏽鋼槽中經歷了酒精發酵和百分之百的乳酸發酵過程，保留了新鮮果味也讓酒質更加穩定，是可以現在享用的一個難得酒款。

Tasting Note

Our Chablis 2013 has a nice bright pale yellow colour. It offers a floral nose with citronella hints. The mouth is fresh, with a citrus touch and a nice minerality.
