酒廠歷史源於1750年，其家族長久以來從事種植葡萄，將自家土地採收後整批銷售給其他酒廠，直到20世紀初，因第一次世界大戰爭和經濟衰退的關係，當時莊主Pierre Gimonnet先生開始嘗試自己釀酒的工作，而後兒子Michel先生於1955年接手莊主位子更加積極投入，成功轉型變為獨立裝瓶的香檳酒廠。目前由Pierre的孫子Olivier先生和Didier Gimonnet先生共同經營管理。

葡萄園皆位於白丘(Cote des Blancs)，目前佔地28公頃，其中12公頃的grand cru在Cramant and Chouilly，14公頃的premier cru在Cuis，依照對各區塊葡萄園的不同，以人工方式分開進行採收，分開榨汁並在溫控不鏽鋼槽中發酵，混合調配出最能絕佳表現風土特色香檳。

    2008年香檳生產49710瓶，2016年07月31日已有18000瓶上市(其中一部分釀造“Fleuron”系列)

    收成品質不佳，年份香檳不釀，內行的您怎能容許錯過啊!
